A Totally Plant-Based, Gluten-Free Cafe Is Coming to South Jersey
LesbiVeggies, a Black-owned vegan eatery, is set to open in Audubon this month.
Despite — and possibly, in spite of — a global pandemic, small businesses owners are still doing what they can to see their big plans come to life. For Lindenwold native and Rutgers-Camden grad, Brennah Lambert, that looks like expanding her vegan meal prep and catering business, LesbiVeggies, into a brick-and-mortar cafe. “I never had any doubt that this [next venture] wouldn’t happen,” says Lambert, who has had plans for the Audubon-based storefront since early 2020. “Growing my business always felt like my purpose, and that confidence and positivity carried me through a pandemic to now.”
Founded in 2017, LesbiVeggies began solely as a meal prep business out of a personal need for plant-based. Lambert says she went vegan in high school due to stomach issues that weren’t easily diagnosable. After posting pictures of what she was making and eating on Instagram, family and friends began asking Lambert to cook for them — a venture which grew to be LesbiVeggies. “Eating plant-based gave me a newfound appreciation for food,” Lambert says. “I wanted to expand my business [into a cafe] so I can continue giving people food that is enjoyable and that doesn’t leave a negative mark on their health.”
So what can you expect from the vegan and gluten-free menu? A little bit of everything, Lambert says. Breakfast items include pancakes, burrito bowls, and avocado toast to start your day, and dinner will feature a range of choices, including salads, wraps, burgers, and specialty Mexican and Asian dishes.
In addition to the diverse food selection, Lambert says she wants customers to feel welcomed and included by the cafe’s overall ambiance. The eatery features artwork and music representative of Black culture, and features gender neutral bathrooms. “Throughout this process, I’ve viewed my business as a way to provide an environment that is totally inclusive, which is important and necessary in the local community,” Lambert says.
Lambert aims to open the cafe’s doors mid-February, meaning you can expect delicious vegan eats sooner than later. (You can follow LesbiVeggies on Instagram to stay updated.) She does intend to keep the meal prep and catering side operating alongside the eatery, and hopes to eventually open multiple locations.
LesbiVeggies is located at 112 West Merchant Street in Audubon, New Jersey. The cafe will offer indoor and outdoor dining, plus takeout.
